This position is responsible for all kitchen functions, including food purchasing, preparation and maintenance of quality standards, sanitation and cleanliness, and employee training in cooking, preparation, plate presentation, portion, cost control, and sanitation and cleanliness. Provides professional leadership and direction to kitchen personnel. Ensures that food preparation and presentation meet R&D specifications and commitment to quality and consistency. Maintains a safe, organized, and sanitary kitchen.
Essential functions include promoting the mission of Zippy's Ka Hana Pono, monitoring sanitation practices, maintaining cleaning schedules, checking food quality, controlling food costs and usage, instructing cooks, supervising activities, ensuring consistent food preparation, inspecting supplies and equipment, ordering products, planning and supervising food operations, overseeing personnel policies, training employees, demonstrating new techniques, maintaining equipment, preparing paperwork, attending meetings, and coordinating with fellow employees.
Other functions may include performing various other duties as assigned.

Qualifications include availability for work on any day of the week or shift, some inter-island and mainland travel, ability to lift up to 60 pounds, strong customer service skills, passing drug screening, pre-employment physical, and TB test within two years, working in varying temperatures, understanding of major kitchen equipment, good communication, interpersonal, self-development, training/coaching, planning, organizational, problem-solving/decision-making, team building, analytical skills, self-awareness, self-directedness, self-responsibility, action-oriented, and willingness to change.
